I got it! Explaination is in the spoiler box below.

The number you look up will always be a multiple of 9...which convieniently enough all have the same symbol. (The symbols relating to each number change every time, but all the multiples of 9 will have the same symbol which is the one that comes up.)
The number you choose can be described as 10X+Y (ie, where X is the number of tens and can range from 0 to 10 and were Y is the numbr of units, ranging from 0 to 9) So for example if you picked 46, the would be 4 tens and 6 units so X = 4 and Y = 6.
We are then told to subtract the sum of the digits. This gives: (10X + Y) - (X + Y) The two "Y"s cancel out so you are left with 10X - X = 9X
Because X is a whole number, 9X must be a multiple of 9, whatever the values of X and Y, so you can pick any number you want.
